My favorite part of Thanksgiving hands down is the leftovers, to be exact the leftover turkey sandwich. I have always loved the sandwiched version of Thanksgiving dinner: white bread, mayo, jellied cranberry sauce, stuffing, and turkey. The only thing is that it does feel a bit wrong to be putting stuffing on top of bread. This Thanksgiving all of that changed! Enter the stuffing waffle!! That is right, a waffle made with stuffing! The stuffing waffle now replaces the bread! It’s a glorious twist.
Sadly, I can not claim the genius of this idea. This inspiration came from Serious Eats.
I used the recommended recipe but did not include the sausage. You do not cook the stuffing but place the raw stuffing in the waffle iron. You will need to mush the stuffing into the iron, as it will not spread like normal waffles. It took forever for the waffle to cook (for our waffle iron 25 minutes) but it is well worth the wait.
Then you build the glory! Mayonnaise and cranberry sauce is applied to both waffles, then add the turkey and if you want to go really crazy add a drizzle of gravy. Grab a napkin and dig in!
I already thinking of ways to talk P into cooking more turkey 🙂
Other meals this week before the turkey extravaganza:
FBB Edits : use coconut oil, increase ginger to 1-2 tablespoons grated, grate garlic, increase curry powder to 2 tablespoons, add 1 teaspoon turmeric when you add the coconut milk , serve with sriracha
FBB Edits: reduce carrots to two, add 1 tablespoon turmeric, use half can of tomato paste, 1 teaspoon coriander, reduce cumin to ½ teaspoon
