This week the South got what we consider a major snow storm. It was snowy, it was icy, there were power outages…traffic got crazy…so we stayed home for two days mid week. Snowpocalypse folks:

While P was enjoying his pour overs, I was enjoying hot chocolate to stay warm. My hot chocolate featured coconut milk because that is what we had in the pantry. I refuse to follow the masses in the bread and milk frenzy so therefore we had neither while snowed in, but the coconut milk worked just fine in the pinch. You do what you have to in Snowpocalypse situations 🙂

The Rest of the Week
Black Bean Enchiladas: this can be made in the crock-pot or the oven, we did the oven version. Increased to two cans of beans. Turned out great and tasted even better as leftovers. We used a mix of sharp cheddar and monterey jack.
Herbes de Split Pea Soup: skipped the pine nuts. The peas did take longer to cook than indicated by the recipe.
Buffalo Chicken Chili: this requires cooked chicken so make sure to factor that into your cooking time. We roasted the chicken in the oven with salt and pepper though I think using some of the buffalo sauce on the chicken would have been great. My favorite part of this dish is the addition of blue cheese. I think this would be just as good without chicken if you increased the celery and beans.
Pimento Cheese Ravioli and Simple Salad: locally made ravioli w/ a salad of mixed baby greens and spinach, cucumber, and avocado with a simple vinaigrette. Making your own salad dressing is crazy easy, here is a good beginning recipe. We just used some red pepper spiked melted butter to coat the ravioli.
